Tropical Tabouli with hummus and field greens
Serves 4-6
Ingredients:
- 1 package tabouli mix
- 1⁄4 to 1⁄2 cup diced dried pineapple
- 1⁄4 to 1⁄2 cup diced dried papaya
- 8 cups baby field greens or other dark leafy lettuce or salad greens
- Homemade or all natural balsamic vinaigrette dressing
- 1 8-oz container hummus
- Feta cheese, to taste
Directions:
Prepare tabouli according to package instructions. When ready, add tropical fruit. Serve on a bed of dark leafy greens tossed in balsamic vinaigrette. Place dollops of hummus around the greens and sprinkle with feta cheese.
