Tropical Tabouli with hummus and field greens

Serves 4-6

Ingredients:

  • 1 package tabouli mix
  • 14 to 12 cup diced dried pineapple
  • 14 to 12 cup diced dried papaya
  • 8 cups baby field greens or other dark leafy lettuce or salad greens
  • Homemade or all natural balsamic vinaigrette dressing
  • 1 8-oz container hummus
  • Feta cheese, to taste

Directions:

Prepare tabouli according to package instructions. When ready, add tropical fruit. Serve on a bed of dark leafy greens tossed in balsamic vinaigrette. Place dollops of hummus around the greens and sprinkle with feta cheese.
